I have always been in love with fruits, and luckily I live in a country where we have almost every fruit all year long!
Mango is one of my all time favourite, so when I stumbled upon this mango muffin recipe, I just knew I had to make it.
Okay, okay. You're right. Those are bananas, not mangoes. Well, I did use all mangoes I had at home, so I had to pick another fruit! But the banana does have something to do with the muffin.
This recipe is incredible because it uses 5 different types of fruit, and I should say, it tastes amazing.
Better yet, these beauties have only 98 calories each. That is, if you make 18 muffins as suggested in the original recipe.
I was dying to use my new cupcake pan I bought from Wilton, so the muffins were a bit bigger, and the recipe was enough to make 10 of them, which increases the calorie value to 180 per muffin. But it is still low!

I was a little skeptical about the nutrition value of these muffins because of the amount of flour it takes, but I made the calculations myself and it was true!

Ingredients
- 5 large egg whites
- 2 tsps cinnamon
- 1/2 tsp salt
- 1 tsp vanilla
- 1 medium banana
- 1/2 fl oz lime juice
- 2 cups sliced mango
- 1/2 oz orange juice
- 3/4 cup apple sauce
- 1 tsp baking powder
- 2 tsps baking soda
- 1/2 cup sugar
- 1 cup whole wheat flour
- 1 cup flour
Directions
1. In a large bowl, combine the flours, baking powder, baking soda, sugar, cinnamon and salt.
2. In another bowl, combine the eggs, apple sauce, lime juice and orange juice; add to the dry ingredients just until moistened.
3. Stir in the mango, banana and nuts.
4. Fill paper-lined muffin cups two-thirds full. Bake at 350 °F (175 °C) for 20-25 minutes or until a toothpick comes out clean.
5. Cool for 5 minutes before removing from pans to wire racks.

In case you are wondering, to get the 2 cups of mango, I used two mangoes. But wait! I have to show you guys, look how pretty the mangoes are:
I didn't cut it too small because I like to feel the pieces of chocolate/fruit/nut as I eat. And I have to say, it was more than heavenly to taste the mango!
Yum!
I'm off to get another one. I can't stop eating them!
