One Pan Cake

I live in an aparment with a kitchen so small, it should be illegal. I was in the kitchen this afternoon making a brine for my pork chops when I discovered I was out of salt. So I pulled out the basket that I keep my baking spices in to get the spare box of salt and saw all the ingredients for this cake and decided to make it as well (yes, my kitchen is so small, I have to keep my spices in baskets in the hall closet). I hadn't made this cake in years but it turned out very tasty. Quick, simple and very delicious!

One Pan Cake

1 1/4 cups all purpose flour
3/4 cup sugar
1/4 cup cocoa
1 tsp baking soda
1/4 tsp salt
1/3 cup vegetable oil
1 tbsp cider vinegar
1/2 tbsp vanilla
1 cup cold coffee (or water)
1/4 cup sugar
1/2 tsp cinnamon

Preheat oven to 350 degrees. In an 8 or 9 inch round or square pan, combine dry ingredients and whisk to combine. Make 3 small wells in the dry mixture and pour oil, vinegar and vanilla into one well each. Pour coffee or water over all and stir to combine. In a small bowl, mix together sugar & cinnamon and sprinkle over batter. Bake for 25-30 minutes or until tester comes out clean. Sprinkle remaining cinnamon sugar mixture over hot cake. Cool for 20 minutes before serving.
