chocolate darlings

Look at that and tell me you don't want a piece. Coconut isn't for everybody, granted, but there's just something about the combination of coconut and chocolate that reduces me to a candy-demanding 5-year old.



5 organic eggs
350g / 11.5oz caster sugar
275g / 9oz plain flour
3 tsp baking powder
1 pinch of salt
5 tbsp good quality cocoa powder
200ml / 7 fl oz water
300g / 11oz unsalted butter, melted
200g / 7oz plain chocolate [or good quality dark chocolate, 70% cocoa solids]
90g / 3.5oz desiccated coconut

Icing
200ml / 7 fl oz whipping cream
2 tbsp espresso coffee
200g / 7oz good quality dark chocolate, 70% cocoa solids

Method
1. Preheat the oven to 200deg C.
2. Beat together the eggs and the sugar until pale and fluffy.
3. Mix together the dry ingredients and carefully blend into the egg mixture.
4. Add the water and melted butter and stir to combine.
5. Line a 40x35cm cake tin with greaseproof paper. Pour the mixture into the tin.
6. Sprinkle coarsely-chopped chocolate over the top.
7. Bake in the centre of the oven for 10-15 minutes or until a skewer inserted into the centre comes out slightly sticky. Leave to cool.
8. Bring the whipping cream to a boil, stir in the coffee and leave to cool slightly.
9. Finely chop the chocolate, add the cream and stir until melted. Spread the icing over the cake.
10. Sprinkle desiccated coconut over the icing and leave to set. Once set, cut into squares.

I halved the recipe and left out the espresso for the icing. I was a bit stymied by the addition of melted butter to the batter, because it all just sank to the bottom and I had to mix it like nobody's business to get it incorporated. Apart from that, this recipe is more or less foolproof, not to mention a keeper. It comes out ridiculously moist and soft, and the dark chocolate glaze with the coconut on top cuts into the sweetness of the cake. IT'S LIKE A BOUNTY BAR IN CAKE FORM.



My mother stole some in the corner before I could have a chance to glaze the whole thing, which is unheard of when it comes to chocolate cakes. So there you have it - this one is endorsed by my mother, hater of chocolate extraordinaire.
