Chocolate Speculoos No Bake Cookies

Have you heard of cookie butter? It’s just as perfectly wonderful as it sounds. It is SO GOOD. You can get it at Trader Joe’s. I found a highly rated recipe for chocolate peanut butter no bake cookies, and simply replaced the peanut butter with cookie butter.

I'm (unimaginatively) envisioning ground up cookies, sort of like matzo cake meal.

The internet isn't helpful: it seems to be like almond butter with gingerbread cookie spices.

Oatmeal cookies aren't my favorite, but these do look pretty amazing! I saw cookie butter at TJ's a couple weeks ago and thought, oh, it must be a nut butter that just tastes kind of like cookies... right? And then I picked it up and read the ingredients and was kind of horrified, lol. I also had a hard time thinking of things to use it on/in... Can I ask what else you've done with it?

A friend of mine did the recipe and I "stole" it from her, ha! Basically, we were done studying and she made them with a cup of coffee. Never seen cookie butter in my life before and believe me when I tell you it's probably one of the most unhealthy things ever but it was really good. If you have a sweet-tooth, this may be for you!

Just so you know, Cost Plus World Market carries this as Biscoff Spread, in creamy or chunky varieties! I bought a jar today, and was surprised at the register that they had a whole platter of samples they were giving out, too. I guess it's starting to take off everywhere.

Mixed it in, but a swirl might have been a better idea because the brownies did taste "different," but I couldn't taste the cookie butter as much as I was hoping.
