Strawberry lemonade bars- YUM!

I was looking through a bunch of old posts trying to find something different to make, something good and summery. I found THIS! I just got my box of produce from the local organic produce co-op and it had strawberries and lemons in it so it worked out great. It is sweet and tart and sooooo good.






Next time I will use less strawberry puree because i made waaaaaaaay too much and went ahead and dumped it all in. I baked it for an extra 15 minutes and it still never got all gel-ish like the original poster's bars but they tasted awesome!
Have fun searching through old posts. I never understand people who come here and post things like "does anyone have a good lemon recipe?" without bothering to look first. This is a baking community- there are all kinds of lemon desserts (or whatever) archived!

Here is the recipe along with the original post:

Strawberry Lemonade Bars
Crust
2 tbls sugar
1/4 cup butter, room temp.
3/4 cup flour
pinch of salt

Preheat the oven to 350F/175C grease and line a 8x8 pan. Cream the butter and sugar together, add the flour and salt until mixture is crumbly. Press evenly into the prepared pan. Bake for 15-20 min or until the edges are slightly golden. Make the filling while the crust bakes.

Filling
1/2 cup lemon juice (about 3 lemons)
1 1/2 tsp lemon zest
1/4 cup pureed strawberries
1/2 cup and 2 tbls sugar
2 eggs
2 tbls flour
1/4 tsp baking powder
pinch of salt

In a food processor blend the first 5 ingredients. Combine the flour, baking powder and salt and add to the lemon-strawberry mixture. Blend until smooth.
When the crust is done, take it out and pour the filling over the hot crust. Return to the oven for another 20-25 minutes, or until the filling is set. Let it cool down before transferring to the fridge for an hour or so to chill (I left it overnight), then cut into bars. You can keep them in the freezer or the fridge. Enjoy!
