So I am holding a baby shower for my sister next weekend and she asked for strawberry cupcakes with vanilla bean frosting. I have googled and found a few recipes but was wanting to ask real people for their recommendations or recipes they may have.

I used strawberry icing when I made them, as per the recipe, but I'm sure they'd be good with vanilla icing too. I don't have a recipe for that though.

I use 3/4 of the recommended sugar and swap out half the milk for strawberry puree. A touch of red food dye makes the pink color of the fruit really pop after they are baked. This is how I make my strawberry cupcakes all the time and they have great texture and taste. They are sweet but not too sweet so they pair well with a frosting.

I find doubling the tiny batch one at the bottom works great to frost a dozen cupcakes.
