Carrot cake fabulousness

So I finally made that carrot cake I was asking about the other week. The original recipe was for a layer cake and I had asked you guys how long to bake it into cupcakes. I follwed the recipe exactly (except for making them cupcakes and baking them for about 20-25 min). I used the OP's cream cheese icing recipe but added an extra 1/2 brick of cream cheese just because i had it and didn't want to waste it. It made a HUGE batch of delicious icing. And I also shredded fresh, organic carrots and cut up a fresh organic pineapple. So. Freaking. Good.




My husband who claims to hate carrot cake said it was really good. He had this cringey look on his face like a 5 year old taking medicine as he was taking a bite. I wanted to slap the look off his face but his expression changed too quickly to "ooh, this is good!" Lucky for him. And even my mom who never compliments me said it was the best carrot cake she had ever eaten. The MIL who is pencil-thin and never eats took two cupcakes. My diabetic SIL couldn't resist after hearing everyone rave and thought it was worth the risk to eat. :o) And my kids ate them and loved it! I told them after they ate it that it had a lot of carrots in it and they didn't even care. I've never had such a reaction to something so simple. Win-win-win.



The recipe is from BBB's "Layers of Eli". I will just post the link because when I try to cut and paste the copy it gets all weird because the way the original post is formatted. The link/recipe includes the cake and cream cheese icing.
It made two dozen cupcakes plus almost a dozen mini cupcakes. This recipe makes a lot!!!!
