Hi everyone! This is my first post in this community, though I've been following it for a while. Yesterday afternoon I made a pie with pears and ground almonds. Everyone in the house seemed to really like it so I hope you will too.
I live in Belgium and found this recipe in a typical, Belgian baking book. I hope I used all the correct terms when translating the recipe, because I'm not really used to writing recipes in English. If anyone has any suggestions or corrections, don't hesitate to leave a comment!
Ingredients
Dough: 200-300gr of crumble
I used premade crumble bought in a supermarket, but you can also make it yourself using the following ingredients:
100gr flour
60gr butter
30gr powdered sugar`
1 egg
Filling:
100gr butter
100gr extra fine sugar
2 eggs
100gr ground almonds (I used 125gr)
2 tablespoons cornflour
Topping:
4 to 5 pears
50gr almond flakes
2 tablespoons extra fine sugar
Recipe
1. Make/buy your crumble dough
2. Whisk butter, sugar and egg yolks until you have a light mass. Scoop the ground almonds, cornflour and egg foam into your mix.
3. Roll out the dough, grease your baking tin (or use baking paper) and put the dough in your baking tin. Pour the almond mix onto your dough.
4. Skin the pears, slice them into four parts and remove the cores. Cut the pears into fine slices and tile them on top of the almond mix. Sprinkle with almond flakes and sugar.
5. Bake the pie in the oven for about 40 minutes on 200°C until it is done. Remove the baking tin and leave it to cool off.
