I had my first cupcake catering gig, providing the sweets for a staged reading of 7 short plays. It was a great show, and I LOVED making these goodies. Made about 14 dozen mini cupcakes for the event. With a one rack oven, it took some time! Got lots of compliments though, and passed out a bunch o' business cards.
First pic is the "short stack" cupcakes
a maple and cinnamon cupcake with maple cream cheese frosting. I made tiny little cinnamon pancakes to top them, a dab more of the maple cream cheese frosting, and then added a tiny slice of candied bacon. VERY yummy, nice and moist, and maple-y without being too overwhelmingly sweet.
Mmmmm, I also made a "strawberry shortcake" that was made from strawberry buttermilk cake, with a nice cream icing made from flour cooked with heavy cream. I used a tiny bit of almond flavoring in the icing. Topped with a strawberry soaked in white balsalmic vinegar and heavy cream whipped with some balsalmic. Oh it was tasty and not too sweet.
