OK, so I haven't actually tried any others, but this one is really good (one I'd tweaked it a bit!)
Can't remember where it came from originally - I did a fair bit of internet hunting before I found one I liked, but I think it might have been netmums.com. I have put the actual recipe with my 'amendments' in brackets for reference.
On to the recipe:
350g / 12oz flour (I use self-raising)
1-2 tsp ground ginger (I use about four times this amount at least. I just chuck ginger in until it looks right!)
1 tsp Bicarbonate of Soda
100g / 3 1/2oz butter or margarine
175g / 6oz light brown sugar (or dark brown)
1 egg, beaten
4 tbsp golden syrup (I generally put too much syrup in and have to add extra flour until the right texture is achieved)
Makes 20 (allegedly! I usually get more - depends on the size of your cutter(s) )
- Put flour, ginger & bicarbonate of soda into a bowl and rub in the butter
- Add the sugar and stir in the syrup and egg to make a firm dough (I usually mix it using my hands. Very, very sticky and gloopy - best to have someone on hand to add flour unless you don't mind getting dough all over the flour bag!)
- Roll out to 5mm and cut out
- Put on baking trays and leave a space as they will spread
- Bake at 190 degrees centigrade / GM 5 for 10 - 15 mins til golden brown (I do them on 180 in a fan assisted oven for 9 minutes but it depends on the thickness of the pieces etc)
- Leave to firm up for a couple of minutes then put on a cooling rack to cool
- Once cool, decorate if required
