These are really good.
BEST DARN SUGAR COOKIES EVER
1 cup sugar 1 cup butter 1 cup powdered sugar 1 cup vegetable oil (NOT olive oil!) 2 large eggs 1 tsp. vanilla extract 1 tsp. baking soda 1 tsp. cream of tartar 4-1/8 cups flour
In large mixing bowl, cream sugar, butter, powdered sugar, and oil. Beat in eggs and vanilla. In a separate bowl mix baking soda, cream of tartar, and flour. Add dry ingredients to creamed ingredients less than 1 cup at a time. Chill in refrigerator at least 2 hours. Drop 1-2″ balls on the cookie sheet. If you would like, you can flatten the balls with the bottom of a pretty bowl or goblet that's been dipped in sugar. Bake at 350° F. for 10-12 minutes or until the edges are browned.

It uses oil instead of butter for the purposes of a more cakey texture is says. Hope this helps.

I have substituted oil for butter before; it seems to work, but it's not perfect.
