Cupcakes & cookies

Graduation cupcakes for a couple of high school students at church :) I saw the cute graduation caps on Bakerella here! I couldn't find the Airheads Belts so I cut up colored Twizzlers for the tassels.



Chocolate chip/mini M&M and peanut butter Kisses cookies for our Confirmation students.

Supposedly Neiman Marcus's chocolate chip cookie recipe found here
  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 3 tablespoons white sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons instant espresso coffee powder
  • 1 1/2 cups semisweet chocolate chips
  • ***I threw in mini M&Ms
  1. Preheat oven to 375 degrees F (190 degrees C). Grease a cookie sheet. ***I followed some suggestions at baked at 300 degrees for 20 minutes instead.
  2. In a medium bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the egg and vanilla. Sift together the flour, baking soda, baking powder, salt and espresso powder; stir into the creamed mixture. Finally, stir in the chocolate chips.
  3. Drop dough by heaping tablespoonfuls onto the prepared baking sheet. Cookies should be 1 1/2 to 2 inches apart.
  4. Bake for 8 to 10 minutes in the preheated oven. For crispier cookies, bake 2 minutes longer. Remove from baking sheets to cool on wire racks.

1 1/4 cup plain flour
3/4 tsp baking soda
1/4 tsp salt (if you use salted butter leave this out)

1/2 cup butter
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar

1 egg
1/2 tsp vanilla

Preheat oven to 190C/375F

1. Sift flour, baking soda and salt and set aside.
2. Cream butter, peanut butter, sugars.
3. Add egg and vanilla to creamed mixture.
4. Throw in your chocolate chips now (I just crushed up a bit of a left over dark chocolate bar)
5. Slowly add the flour mixture.

Bake for 6 minutes [she needed 7 and I needed 8 ... :)]

1 ½ sticks of unsalted butter
1 ¾ cups of sugar

Beat well, then add:

Add 2 large eggs
2 Teaspoons of pure vanilla
½ teaspoon of salt
2 ½ teaspoons of baking powder
2 ½ cups of flour
1 ¼ cups of milk
***I added about 3 tbsp cocoa powder for chocolate cupcakes

Bake at 375 for 18-20 minutes
