Vegan Almond Apple Muffins

Want to try my favorite muffins ever?
I want to "try" them ALL THE TIME.

Ignore the health aspect! These are seriously the best! (& approximately 175 calories each for those who care.)

This is not heavily modified by me. It is from the almost too good to improve recipe in Veganomicon. I used strawberry applesauce because it was on sale and I'm pretty sure that where a lot of this success came from. The almonds get super crunchy when you bake them.

You will need:

~ mixing bowls
~ whisk
~ muffin tin
~ wooden spoon

Ingredients:

~ 3/4 cup soy or rice milk
~ 1/2 teaspoon apple cider vinegar
~ 1 cup unsweetened applesauce (I recommend strawberry applesauce if you can find it!)
~ 3 tablespoons canola oil
~ 1/2 cup brown sugar packed
~ 1 1/2 cups all purpose or whole wheat pastry flour
~ 3/4 cup oat bran (you can find this in the cereal section)
~ 2 teaspoons baking powder
~ 1/2 teaspoon baking soda
~ 1 1/2 teaspoons cinnamon
~ 1 teaspoon cardomom
~ 1/2 teaspoon nutmeg
~ 1/2 teaspoon allspice
~ 1/2 teaspoon salt
~ 1/2 cup raisins (I used golden raisins and I will never go back. They are so much like moist little grapes after baking them!)
~ sliced almonds for garnishing

Directions:

~ Preheat oven to 350 F
~ Whisk soy milk and vinegar together in a bowl and let stand for about a minute before adding applesauce, canola oil, brown sugar. Whisk it around and around.
~ In another bowl sift together flour, oat bran, baking powder, baking soda, spices, and salt.
~ Fold dry ingredients into wet and stir just to moisten (do not even think about over mixing.)
~ Fold in raisins
~ Either spray each muffin cup with cooking spray or use muffin papers. Fill each cup 2 thirds of the way full and garnish with almond slices.
~ Bake for 28-30 minutes or until a toothpick inserted in the center comes out clean.

I am positive vegans and non-vegans alike will trample people for these muffins.
