Homemade Jaffa cakes

As you can tell, the chocolate-topped ones in the front are the homemade Jaffa cakes. They were delicious.

I made the cupcake base from this Victoria Sponge recipe, which was actually kinda terrible. It turned out okay because I like baking and could guess the missing steps, but next time I'll use St. Delia's recipe.

I spooned a bit of the top of the cupcake out and filled in with McKay's Orange Marmalade with Champagne which was perfectly nice. If I put up some marmalade this winter I'll try it with homemade.

And I covered the whole deal with semi-sweet chocolate Ganache. My recipe was 2/3 cup chocolate pieces (chips or chopped small) and 1/3 cup double (heavy) cream. Heat the cream slowly to a boil and as soon as it starts to boil pour it over the chocolate and whip until smooth. I added a little Orange extract after it was smooth.

The other cupcakes are just chocolate cake with white chocolate cream cheese icing, nothing special. But pretty tasty.
