I think becoming "Vision girl" humbled her for starters. I think Cordelia always had layers. It's just she kept up appearances until that point.

Cordelia: What is your Childhood trauma?

She says it harshly but given the situation, who could blame her then? She didn't understand Buffy's motives at that point so assumed the worse.

Cordelia was raised by wealthy parents and I think she never got enough attention from them. She was always struggling to find where she fit in.
