Getting your epic mount at 70 is going to be a bitch. Here's what I recommend. Do every quest you can. You should hit 70 in Outlands with two entire zones entirely untouched. Completing quests at the level cap gives you extra gold in place of the xp you lose. The quests in those two zones should net you about 2k gold.
I really haven't been hurting for cash at any time since I started playing though. I took two gathering professions (herbs and skinning) and just sold everything I didn't need. I also bought and resold a lot of stuff on the AH for profit. That being said, 5000 gold is a lot of money for the epic flying mount. Is it worth it in your opinion? I haven't seen any of the burning crusade content yet.
It is absolutely and totally worth it. The speed you get off an epic flying mount will make everything else seem like you've gone amish. The epic bird flies as fast as the standard griffon transports... meaning 280% standard running speed. Regular birds go epic mount speed... 100%.
I would look into dropping one of your professions and picking up a craft. Alchemy is fantastic for making money, and the epic crafting clothing beats a lot of high tier gear. I've found ways to make money with almost every profession if you work at it a bit.
I thought about dropping one of the gathering professions and taking up the crafting that complements the other, alchemy or leatherworking. I know it takes a lot of mats to get your skill high in those professions though.
