Ingredients
1tbsp olive oil
1 red onion, cut into small pieces
1 courgette, cut into small cubes
1 red pepper, deseeded, cut into cubes
1 yellow pepper, deseeded, cut into cubes
100g cherry tomatoes
105g roast chicken bites
140g tomato pasta sauce
4tbsp low fat crème fraiche
2tbsp mascarpone
20g cheesy tortillas, broken into crumbs
Method
Preheat the oven to 200°C. Heat the olive oil in a large saucepan, add the onion and fry for 2-3 minutes or until softened. Add the peppers and courgettes and fry for another 2 minutes or until softened.
Stir in the cherry tomatoes, chicken bites, tomato pasta sauce and crème fraiche and warm through for 2 minutes. Tip into a 20cm x 30cm ovenproof dish and dot with teaspoonfuls of mascarpone.
Scatter with the tortilla crumbs and bake for 15-20 minutes or until warmed through.
