Quinoa Pilaf with Chickpeas & Almonds

Shiny new recipe of the year #1 did not exactly work out according to plan. Or even close to it. I'd been looking forward to it all day, started cooking and while it didn't look great, it smelt heavenly. Only it was awful. It was SO salty, that I literally gagged and spat it out. No salt at all in the recipe, so I've no idea what I did wrong.

So, rather than nomming on a

Ingredients
2 tablespoons water or vegetable stock
1 onion, chopped
1 stick cinnamon
4 cardamom pods
2 cloves garlic, crushed
1 red pepper, chopped the whole allergy thing means i skipped this one heh
2 courgettes, sliced
225g quinoa
600ml vegetable stock
400g tin chickpeas, drained and rinsed
60g toasted flaked almonds
60g pumpkinseeds

Method
Heat the water in a large saucepan and saute the onion with the cinnamon and cardamom for 2 minutes
Add the garlic, peppers and courgettes and cook for a further 2 minutes
Add the quinoa, vegetable stock and chickpeas. Stir and bring to the boil. Reduce the heat ad simmer for about 20 minutes until the liquid has been absorbed and the quinoa is cooked
Pile the pilaf on to the serving plates. Scatter over the almonds and pumpkinseeds.
Eat.
, I had cheese, crackers, carrot sticks and babycorn. Not really the same!
