I don't think it was the kitchen staff in this case, unless it's a pre-made souffle that the staff don't even touch, or they outright lied to the OP. There is no way anyone who made it would not know that souffles are almost entirely eggs. Either somebody lied, or the waitress didn't ask at all.
I was wondering if it might have been a miscomunication. As in the waitress asked, "Do we have a dessert that doesn't contain eggs", the cook heard, "Do we have a dessert that contains eggs" and thought to himself, "Souffle! Souffle's have LOT'S of eggs!"
And ironically, their fudge sauce has eggs in it too. I don't quite understand why. I know eggs made dishes creamier and fluffier, but fudge sauce? really?
It can happen. Years ago I was going to pick up subs for me and my GF. She called in the order and I heard her say, "Small Italian with everything but hots". After I brought the subs back and she opened hers it was a small Italian with nothing but hot peppers.
She was pissed and immediately assumed someone was deliberately screwing with her. I told her it was a lot more likely that the guy on the other end of the phone thought she had said, "Small Italian with nothing but hots.".
When I went back they apologized, made her a new sub and refunded the money for my trouble.
I feel dumb for not knowing that souffle had eggs. I don't eat sweets often because I'm trained to stay away from treats that I didn't personally make, but I really did believe it was safe to eat :/
I would figure though, a cook would know that souffle = eggs.
I will most certainly ask for an ingredients list. I know here in NYC/Long Island, restaurants are required by law to list calories and nutrition info.
