Dances with crabs

Yesterday, I was told to abandon the silver wear I was rolling, put on a chef coat, and follow the managing partner. "I have something much more fun to do than that," says he.
Into the back of the kitchen we go, and there is a humongous stack of fish to cut and prep. I am in the inner sanctuary of knowledge. Squeeeee! In the course of all the cutting, bagging and labeling, I learned a ton about each of the types of fish, where it comes from, how to cut and portion effectively, storage and shelf life, and I got to play with the soft shell crabs. I do enjoy myself in the kitchen. Prep just rocks.
