I shop at my local produce store, and they are very kind and set aside boxes of non-perfect produce for my chickens. About half of the veggies are so nice that I use them in my own kitchen, and I've taken homemade bread and jam back to the store owner to thank him.
Today's box yielded EGGPLANT. Ugh. The one veggie I can't stand. I think it is a texture issue....
Come on someone--convince me. Who has a good eggplant recipe? Otherwise, it is off to the chicken coop with it.
Have chicken cacciatore in the crockpot right now---our own organic rooster (slaughtered yesterday), fresh peppers, baby potatoes, basil, onions, tomatoes, mushrooms--all courtesy of the Chicken Box! I know the potatoes aren't "correct" for the recipe, but figure they'll taste good anyway. :)
