On Sunday, I baked a carrot cake with my 12 year old cousin, Sydnee. Well, Sydnee did most of the baking while I supervised and made sure she didn't hurt herself or send batter flying all over the kitchen.
Apparently I'm very bad at this.
The carrot cake came out rather dense and flat. I couldn't figure out why. I just stared at the two cakes sitting on the cooling rack, wondering why they weren't moist and fluffy. Where did we go wrong? It puzzled me while we were frosting the cake and continued to puzzle me while the girls - Sydnee and her little sister Kylie - dug in and declared the cake delicious.
Maybe they don't know what carrot cake is supposed to taste like. Although, to be honest, I'm not entirely sure what carrot cake is supposed to taste like either since I've never had it and never will because I'm allergic to the dairy in it.
Anyway, the mystery of the carrot cake continued to stew in the back of my mind while I went about having fun at the BBQ and when I was driving down to San Diego Monday morning to attend class.
Then it came to me last night: we forgot to add baking powder. I saw her add the baking soda but I can't recall whether or not she added the baking powder.
*headdesk* (Or maybe *headcountertop*?)
On the bright side, the frosting came out wonderfully! Well, if you ignore the random chunks of sugar in it because we were too lazy to sift it before adding it into the cream cheese. But otherwise, it was delicious.
