Technically these are lactation cookies, designed to help mothers' milk supply, but they are damned tasty and generally fairly healthy, containing relatively low sugar and butter, and lots of nutritious oats, fruit and flaxseed! There are numerous recipes online for these but all in US measurements, and I don't own a measuring cup so I translated it to metric weights and tested. Two batches have been made so far - the first was a little too sweet for my tastes so I reduced the sugar and I really like the result!
1 tbsp flaxseed meal
2 tbsp water
112g butter
125g demerara sugar
1 egg
few drops vanilla extract
125g plain flour
1/2 tsp bicarbonate of soda
1/2 tsp salt
1 tbsp brewers yeast (I've been using slow action baking yeast)
135g rolled oats
100g raisins (or choc chips)
Makes about 24.
Mix the water and flaxseed meal and put aside
Cream the butter and sugar, beat in the egg.
Add the flaxseed meal mix and vanilla extract, beat.
Add dry ingredients and mix thoroughly.
Roll into balls the size of golf balls and flatten slightly. Bake on a greased tray for 10-15 mins at 180oC until lightly golden.
Keep out of reach of husband.
