Ingredients:
1 lean chicken
160g black glutinous rice
3 fresh ginseng
3 red dates
3 cloves garlic
salt to taste
Enough chicken stock to last 4 hours' simmer
Method:
Clean the chicken, ginseng and garlic. Soak the glutinous rice for 15-20 minutes and take the seeds out of the dates.
Slightly crack the garlic. Stuff the glutinous rice into the chicken cavity and seal the openings (both the head and tail end) with toothpicks or kitchen twine.
Put all the ingredients into a pot and and add the stock just enough to reach about 3 inches above the chicken. Bring to a boil and simmer over a very low flame for four hours.
