1. I'd personally recommend
Debian
, but then I have to say that ;)
2. I tend to use
vsftpd
these days. The configuration is pretty simple.
3. If you install
samba
, you should be able to access files shared on the Linux box from your windows machine.
Let me know if there's any other help you need..

Do I need all 5 DVD iso images?? Seems excessive for a Linux install. lol.

No.. you just need the "netinst" image (about 150M I think), which contains the installer and the base system. Everything else gets downloaded from the 'net when you need it.

Ah, downloaded 'em anyway. THe joys of 50Mb Virgin cable. ;)
WEll, tomorrow is the "install" day, so lets see how it goes.
