The dog handlers I used to know back home swore up and down that if you could pin a big dog for a few seconds, at least until it stopped trying to squirm out from under you, it would usually be pretty submissive. Not sure if it'll work with this one, but it's that or clamp the muzzle shut like a pack leader would do.
