It is Jewish tradition to never write out the whole word of "God" where it can be destroyed or mangled because to destroy/mangle His name, even on paper, would be like mangling Him. At least that is what my roommate has said and she's rather a rather orthodox Jew and since Chekov was reciting a bit in Hebrew (or so it looks like) the spelling would be left like that to represent what was said was a quote from something in the Jewish faith.

Of course... this is my interpretation and I could be wrong...

You should try it some time, it's a real trip.

The explanation below for writing G-d is pretty good. I'm not keen on the particulars, but when one is Jewish, one does not write out the name of G-d.
