Predictably tweaked excellent cookie:

Double Chocolate Dream Cookie (mint version):
from Nestle Toll House Best-Ever Cookies

2 1/4 c all-purpose flour (1 c ww, 1.25 c white)
1/2 c baking cocoa
1 t baking soda
1/2 t salt
1 c butter or margarine, softened (I used butter this time)
1 c packed brown sugar (I had light brown on hand)
3/4 c granulated sugar (I cut back to 1/2 c)
1 t vanilla extract
2 eggs
2 c (12-ounce package) Nestle Toll House (TM) semi-sweet morsels (scant 1 c dark choc chips, rounded 1 c mint chocolate bits!)

- Combine first 4 ingredients in a bowl, mix.
- Cream together butter, sugars, and vanilla extract.
- Add 2 eggs, beat until light and fluffy, app. 2 minutes.
- Gradually beat in dry ingredients, then stir in morsels.
- Drop by rounded T onto greased (parchment papered) baking sheets. Do people who bake a lot not use parchment paper?
- Bake 8-10 minutes at 375F or until puffed. Let stand for 2 minutes on cooling rack, then remove from baking sheet to complete cooling.

Notes: I think cutting back on the sugar made more of the focus on the cocoa flavor. Oh my god these are amazing. The ratio of mint to chocolate, and using dark chocolate chips, enhances everything. This made 65 cookies for me - I err on the small side, but this works very well for diabetic portion control. Also, after making rounded balls, I smushed them a little flat to make sure they cooked evenly. They don't spread out a huge amount, so I could fit 4 rows of 4 on my large baking sheets.

Carb count: 73 (ww flour) + 92+23 (1.25 c white flour) + 206 (1 c packed light brown sugar) + 100 (1/2 c granulated sugar) + 8 (1 g carb per 1 T of this cocoa) + ~110 (dark choc morsels) + (17*8) (mint choc morsels) = 748, /65 = 11.5 per cookie! That's entirely reasonable.
