I'm super late to this, hope you don't mind some more recs!
1) Fantasy AUs
Steve:
Immortal Engines by rhymer23 is an awesome steampunk AU which vaguely follows the plot of The Avengers, but in 1878. There are POV chapters from all the team. Has bonus art at the end of each chapter!
the sirens and the thunder by legete is kind of a fantasy AU (Captain America as in canon, only Bucky is a selkie).
If you're interested in 616!AUs, one of my absolute fave fics of all time is Heroes and Devils by marinarusalka, which is technically a crossover with Fallen London, but is totally accessible as a steampunk AU with zero prior knowledge.
Loki:
I don't have any specific fantasy AUs focusing on Loki as such, but a lot of canon/norse myth hybrid fics read a lot like fantasy. See if any of these take your fancy:

Diamond in the Rough by carzla and Waking the Dragon by tsukinofaerii are both great straight-up fantasy AUs.
