This is one of the things that I made for my holiday dinner.... a
Goat Cheese and Sun-dried Tomato Quiche (minus the proscuitto). Yummm yummmm!!!! It turned out even better than I remembered and was super easy to do. I'm sure there are other lovely variations out there just waiting to be tried, including a pesto version that I saw! :) It even won approval by one of my friends who is self-professed hater of all "soups, stews, casseroles and quiches." I had a feeling that this recipe might break him of that horrible affliction and blanket statement! *hehehe*
I also made
Emerald Mashed Poatoes with kale that I *love* making for the holidays. I have to say that it turned out a bit better last time when I substituted 2/3 of the milk with cream though. It was so heavenly and to DIE for!!! I also love to top it with mushroom gravy. It was super yummy when I had it with handmade cranberry sauce for Thanksgiving this year! :)
There were rave reviews for the food and lots of fun chatting and cooking together, kinda like the old days! It's too bad that my kitchen is not better suited to this. I seriously need to do more of it in the future! I love having people over!!! Hopefully next time I will be a little better organized and the weather won't keep quite so many people away. Nevertheless, I was blessed enough to see a handful of friends show up throughout the afternoon and evening. My cousin and his girlfriend,

krazyfelioness all made it out to join the little one and I for a nice intimate holiday gathering. It turned out to be just the right size for lots of laughter and good conversation. =)
