Was the goat nice? Its one of my fave meats and much better than lamb/mutton.
this receipe is for curried goat, 1 lb goat
salt to taste
2 oz butter
2 T madras curry powder
1T Tumeric
2 Cloves garlic crushed
2 ripe tomatoes, stewed and strained
2 large minced onions
1/2 c beef/lamb stock or water
2 T finely cut celery
2 T diced apples
1 Bay/Curry leaves
Cut meat into 1-inch squares; salt meat and brown lightly. Add onion and apples; saute thoroughly. Sprinkle mixture with curry powder and tumeric. Add chopped tomatoes and stock/water, cover saucepan and let cook slowly until tender stirring ocassionally. Serve with steamed rice.
The goat was fantastic. I'm afraid I'm not a big fan of curry, so I went for a pot roast. I just braised it in a pint of beef stock in the oven very slowly, with some salt, pepper and rosemary out of the garden. I then skimmed the fat off the liquid, mixed it with a tablespoon of cornflour paste and boiled it into a gravy. Add new potatoes and runner beans, and bob's your uncle!
