Ingredients
3 small potatoes
2 medium sized carrots
2 stalks of celery
2 yellow onions
2 cloves of garlic
1 qt chicken stock
1 can of beer, (I prefer lager or ale, stout is too strong, imo.)
1/3 cup flour
1 cup milk (or more if you need it.
3/4 stick of unsalted butter
3/4 lbs grated sharp cheddar cheese
1 tsp black pepper
1/2 tsp dry mustard
salt to taste.
Chop the vegetables and toss in a pot with stock, beer and spices. Boil until the vegetables are soft. Puree the mixture.
Melt the butter in a sauce pan. Add the flour. Whisk constantly until the flour is toasted and slightly brownish. Slowly add the milk. If it gets too think just add more milk. Add the cheese, and stir until it's all melted and the sauce is smooth.
Add the cheese sauce to the pureed mixture.
Serve with popcorn on top.
