A new menu item

I tried a crock pot Coconut Curry Chicken soup. It was a good starter try but mostly tasted like chicken soup with a very slight kick of heat.

Recipe:

chicken breast
1 can of lite coconut milk
2 tbsp green curry paste
1 orange pepper (recipe called for green but I worked with what I had)
double handful of baby cut carrots, cut up
2 cups of chicken broth

The recipe said you could add another cup of coconut milk at the end to make it creamier but I didn't have enough. I want to try that next time. I served it over rice and couldn't get Maurice Sendak's Chicken Soup With Rice out of my head the whole time I was eating it. It was tasty enough but I would love any recommendations that you folks have for tweaking it.
