1/4 cup chopped pecans, divided
1 (9 inch) graham cracker pie crust
1 (21 ounce) can apple pie filling
2 (8 ounce) packages cream cheese, softened
1/2 cup sugar
1/4 teaspoon vanilla
2 eggs
1/4 cup caramel topping
12 pecan halves
Sprinkle half of the chopped pecans in pie crust. Reserve 3/4 cup apple pie filling; spoon remaining filling into crust. In a bowl, beat cream cheese, sugar and vanilla until smooth. Add eggs, beating well. Pour over apple filling. Bake at 350 degrees for 35 minutes, or until center is set. Cool. Combine reserved 3/4 cup pie filling and caramel topping into saucepan. Heat about 1 minute. Spoon onto cooled pie, spreading evenly. Sprinkle remaining chopped pecans over top. Decorate with pecan halves. Refridgerate until ready to serve.
I left the pecans out of mine and it was pretty good. It's basically a cheesecake (altho i did not know that at the time) so i figure you can use any kind of canned pie filling, if you dont want apples. It was good though :)
