This is one of my faaaaaaavorite recipes to make. And I lost my gingerbread recipe so now I'm scared of losing all my favorites that I only have on hard copy... It's really, really good, and really, like, not that bad for you. DELICIOUS APPLES. P.S. Don't substitute apple juice for the cider. Hahahaha. Also, it's easy to make if you have a food processor! Recipe is originally from Cook's but messed with a bit because, um, I like it with extra spice.
¾ cup dried apples, diced
1 cup apple cider
1 ½ c flour
1 teaspoon baking soda
2/3 cup sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1 cup unsweetened applesauce
1 egg
½ teaspoon salt
1 stick of butter, melted
1 teaspoon vanilla extract
1. Oven to 325F. Tear out a big strip of aluminum foil. Fold it in half hot-dog style. Line an 8x8” pan with it, poking around so it’s basically, like, lining the pan. Spray with Pam. Or don’t.
2. Put dried apples and cider in a little saucepan. Bring to a simmer over medium heat; cook 15 minutes (or until the liquid is gone and it’s dry-ish).
3. Whisk flour and baking soda. Set aside.
4. Whisk sugar, cinnamon, nutmeg, and cloves. Take out 2 tablespoons of this mixture and set them aside elsewhere. Set the main sugar mixture aside, too.
5. Dump apple mix and cider in food processor. Process until smooth (20-30 seconds in a big one. God knows how long in a small one).
6. Whisk egg and slat in large bowl. Add sugar-spice mix. Whisk until well-combined. Add butter in three additions. Add applesauce mix. Add vanilla. Mix. Fold in flour mix.
7. Dump batter into pan. Smooth it flat. Sprinkle reserved 2 tablespoons sugar-spice mix over batter.
8. Put cake in oven, 35-40 minutes, or until that mythical skewer-comes-out-clean. I use a fork because I’m too poor for skewers whose only use is being stuck in cakes. Cool cake.
9. Eat delicious cake.
