So, this past week I had Spring Break and had the opportunity to try some new recipes. I thought I'd record my trials here and give comments.

Monday: ABC Sandwiches

My adaptation:
Ingredients:
  • potato bread
  • bacon
  • granny smith apples
  • butter
  • cheddar cheese
Directions: Fry bacon accordingly. Butter both sides of bread. Place on skillet. Arrange apples, bacon, and cheese then top with second slice. Grill both sides :-)

Comments: So good! Tim had two and said it was a keeper :)

Tuesday: Veggie Pizzas and Spinach Dip

Adaptation:

Veggie Pizza Ingredients:
  • Ranch Packet
  • Crescent rolls
  • Mayo
  • Cream cheese (8oz)
  • Veggies
  • Shredded cheese
Directions: Make Ranch dip according to package directions (includes the mayo) then blend with cream cheese. Roll out crescent rolls to fit pan. Brown. Spread ranch mixture on browned crust then add toppings.

Comments: Tim said mine was a little different from Sue's but no complaints.

Spinach Dip Amendments: I added more cheese than called for, used garlic powder instead of clove, and I microwaved the dip instead of slow-cooking.

Comments: We both enjoyed it. Not the best ever but pretty good.

Wednesday: Dinner at Jena's

Thursday: Coconut Curry Chicken

Adaptations: Spiced chicken using pepper, garlic powder, and garlic salt not 5-spice.

Comments: Still needed salt and pepper after done. Pretty good.

Friday: Tortellini Chicken Casserole

Adaptations: Added spinach and shredded mozzarella. Grilled my own chicken rather than buying pre-made.
