Made this last week trying to imitate the tortilla soup that is all the rage right now. However, I didn't have all the ingredients necessary so here's the tasty stew that turned out:
Boil a pack of skin on chicken thighs (or whatever parts, the important part is getting the juices into the water). Remove chicken, skim any fat off the top of the water. Add chicken boullion to the water to make the flavor stronger. While the chicken cools in the fridge, chop an onion and peppers (I used orange and yellow but green and/or red would work too). Add to the broth. Add a can of stewed tomatoes. Boil. Pick apart the cooled chicken (only getting the good lean stuff and leaving off all fatty pieces). Add carrots and the chicken. Boil/simmer until all the vegetables are cooked, seasoning with black and red pepper to taste (loved putting a ton of cayenne in). Who knows what the actual calories and fat are of this recipe? It's healthier than eating out or making convenience food. It's easy. Plus- it tasted really yummy and was filling. Top/eat with tortilla chips, salsa, and queso fresco if you choose. Mmmmm. Oh boy... *LOL* ...another reason to buy Kyle salsa. It doesn't last too long around here. I would have to get to it before the groceries are done being put away. Thanks. ;)
