I have decided to take a concerted effort to eat better. I am not sure if today has met my own criteria, but I am working on it. I have a philosophical belief that one should not eat artificial and processed foods, given the opportunity. Sadly, eating such foods has been my modus operandi for many, many years and I feel it is important to practice

1. 26 MPG average (that's not highway, that's what we get on average, in our car)
2. Car chassis (you can say it's not a "real" suv.

Eating healthy is a worthy goal, for sure, though not an easy one. I've been working on it in earnest this year and am still hit & miss on cooking healthier meals at home. Having the right tools and a well-stocked pantry helps. Last night I threw together "Creamy tomato basil pasta" from Vegan Yum Yum with no perishables on hand (except my basil plant which I've been babying all year to keep alive!). I subbed the fresh tomatoes for canned stewed tomatoes, grabbed a handful of basil off my plant, and used frozen cashews in the fridge. Took me about 20 minutes to make it, and it was vegan (no cholesterol, low in fat, etc), homemade, and cheap.. Even Austin the carnivore liked it! Fresh fruits and veggies go bad so fast.. but stuff that lasts longer, like potatoes, apples, garlic, and onions, are easy to keep on hand since they keep for so long (especially in cooler areas of the kitchen). Let me know how it goes ok? I'm always looking for tips and tricks to make eating better, easier to do. :)
