300 Sugar Saving Recipes by Harriet H Hester.
Mom gave me this for christmas. It was a war-time produced book with the purpose of conserving supplies while there is a shortage. I <3 it, and Can't wait to try some of the recipes.
Here's a sample:
"Baking without Sugar"
1 cup sugar = 3/4th cup honey, with 1/4th less liquid
Or = 1/2 cup honey, 1/2 cup sugar, with 1/4th less sugar
OR = 3/4 cup molasses w/ 1/4t less liquid and 1 additional 1 teaspoon baking soda.
OR = 1 cup corn syrup, with 1/3 less liquid in plain cakes, muffins, and cookies. This will not be as sweet, however.
OR = 1 cup corn syrup and 3/4 sugar, with 1/3rd less liquid in sweet cakes and candy
OR = 1 1/3rd cup maple sugar
1 cup honey with 1 teaspoon baking powder equals 1 cup molasses with 1 teaspoon soda.
It goes on even further, with suggestions about how to use fruit juices from canning, dried fruit, etc. It then goes into the recipes of assorted breads and whatnot.
