Sounds like you haven't done the mediation, the due process hearing, state complaints, etc.
Ask again for a reevaluation. If the principal says no, say you want that refusal in writing, so you can start the dispute process. That may be enough to at least do the eval.
The 504 may be possible if she needs a para (she sounds like she does).
What would happen if you weren't available to come to the school? And aren't they exposing themselves to liability by having you there for something that you aren't responsible for? You're not an employee, and you're not a volunteer (and they usually need background checks).
Also, my son won't eat lunch, he is at his second school (graduated his first), and nothing. We've worked with OTs, tried in the room, out of the room, alone, with peers, with headphones on, hot lunch, cold lunch, lunch from home, everything, and he simply won't eat lunch. EVERYONE tried.
