We have been doing food chapter in my spanish class and it always makes me hungry. None of the people in my class knew what empanadas were. I love them and I remember that Mom had a good recipe that she used to make. I harassed her and got the recipe. It was a bit more complicated than my normal recipes (the dough has to be made the night before), but I decided to try it. It was pretty easy. I had to get a little creative with my recipe as Tesco has a VERY poor spice selection. They had no savory, so I used more thyme. They also had no cloves! Eight different types of curry, nine of pepper, but no frickin' cloves! I ended up using a dash of chinese five spice (one of those spices being cloves...) It worked out alright.

I baked em up this morning (I had to use the top of a Jelly Belly jar as the cutter for the dough, it was the right size!) and they turned out great! I brought them with me to class and they went over really well. I have just enough left for dinner tonight. Mmmm... food.
