so i made some food last night. pretty easy stuff that i just kinda made up.

frittata for breakfast.

olive oil in a hot pan. saute 1/2 of a large onion, t tbsp minced garlic and 1/2 red bell pepper. salt and pepper. saute until soft , then add in some breakfast sausage, like jimmy dean's. just about 4 oz. not too much.. saute until cooked through. add in hash browns. i'd say about three large handfuls... maybe a few cups. i just bought the frozen kind and defrosted them a bit. cook in the pan with veggies until it looks close to done.. maybe 5 - 10 minutes.

the i mixed 2 egss and 4 egg whites together.

i greased a casserole dish and then put the potato mixture into it and then poured the eggs in and mixed them together by hand.

added some shredded mexican cheese blend on top. maybe 1/2 cup and baked in the oven at 400 for 15 minutes. this might take longer in some ovens, so keep your eyes and nose open. i usually wait until i can smell it from the couch.

it's pretty dang good. i salted and peppered pretty thouroughly as potatoes can really soak up that flavor, but it helps to have that sausage in there to beef it up.

then i made a macaroni salad.

i 16 oz package of salad macaroni, 4 celery stalks and 1/4 of a large white onion.

make the macaroni according to the instructions. mince the onion and celery.

in a large bowl combine all ingredients with about 3/4 cup miracle whip. you might want to try a little less just depending on how strong you like the flavor. it's simple and delicious on hot summer days!

salt a pepper to taste..

viola!

i had the frittata for breakfast and lunch today. it was that good. to me anyhow. really good with tabasco sauce.... i'm such a hick that way.
