INGREDIENTS
Skim Milk - 2 cups
Sweetener - 2 tbsp (I would use sugar, at about 1.5 tbsp. Need to experiment)
Peppermint extract - 1/2 tsp
Unsweetened chocolate (finely chopped) - 1/2 square
Hot brewed coffee (double strength) - 2 cups
Whipped cream - 1/2 cup
DIRECTIONS
1. Mix skim milk, sweetener and peppermint extract in saucepan. Stir thoroughly, while heating. Do not boil. ~ 5 minutes.
2. In a separate bowl (medium sized will do), add mixture to chocolate until melted and well blended
3. Stir resulting mixture into coffee. Pour into cups and top with whipped cream.
