I’m in a cooking mood…anyone else have a recipe to share???
Coconut Peanut Shrimp
You will need:
1lb bag of cooked shrimp
Bag of shredded coconut (I do like the sweetened kind, but you can get the kind that isn’t…)
Thai Peanut bake (several brands make this, they’re all good, you can get it in the grocery store international foods section…not all store have it, but look around...we live out in the boonies and two stores carry it…)
Olive oil
Thaw your frozen cooked shrimp (I use the microwave) and blot the excess water from the shrimp.
Preheat oven to 350 degrees
Take a large ziplock bag and place about half the shrimp inside along with half a table spoon of olive oil, 1 ½ cups of coconut and one packet of peanut bake.
Shake the bag and place in a long glass baking dish (or you can use a cookie sheet that has walls.)
Repeat with the remainder of the ingredients.
Place coated shrimp in the preheated oven and leave them in there for about a half an hour. You aren’t cooking the shrimp, but you are trying to crystallize the sugar on the coconut and in the peanut bake…take ‘em out when brown, and eat!
