Christians and The Old Testament

I don't know a lot about the Bible and I don't care about it in itself, but I do care about how it and the attendant 2000+ years of scholarship on it affect the behavior of the monkeys I need to share space with.

So understanding that Christians are a varied and centerless group, I wonder why they pretty much universally don't keep kosher, but often do care about the ten commandments and split on whether or not they care about Leviticus' condemnation of homosexuality. For the public at large, I can believe that it's a matter of leadership. Even most fairly devout Christians don't actually make these decisions for themselves, that's what they have a pastor or priest for. But I'm wondering what the experts in the sects have to say. Anyone know a religious scholar they can ask about this? I know some people who go to church, what's your church's stance on this and how consistent is it? Why are some parts of God's covenant with the Jews relevant to your Christianity while others are not?
