Busy times. Felt terrible at work yesterday. Tempted to - gasp! - go home sick, but I have only ever done that once for reasons of random puking and that happened to be the day that a touchy artist with a divo complex tried to drop off a statue and my boss found out my coworker had taken an unscheduled extra-long lunch in the middle of the afternoon and hadn't told anyone and they ended up yelling at each other inside the art vault while I pretended I couldn't hear them. So awkward.
Anway. Very sick yesterday for reasons of probably stress, exhaustion, headache, burnout, fighting off cold. Felt bad this morning but had nice customers so felt better. Then S & A O invited me for supper and in 1.5 hours, including time to buy groceries, Sarah (with me helping chop & peel) created an amazing steak-&-shrimp and seasoned hobo-packet BBQ dinner. Amazing.
Marchand's Special Hobo (Transient? camping?) Packets:
- slice baking potatoes into circles 1/3 " thick
- slice mushrooms into thin slices
- same with carrots
- put all on top of foil
- drizzle with olive oil, say at least 1 tbs if not a wee bit more
- sprinkle generously with Seasoning Salt (the orange kind)
- wrap foil up into packet
- put on BBQ or in/on/under coals of fire
The key here is the seasoning salt.
Walnut Pesto Shrimp:
- olive oil
- chopped walnuts (2/3 of small package)
- 2 packets of Superstore basil leaves (8 tsps) fresh chopped
- raw, de-veined and shelled lg shrimp
- whoops I forget what else, probably salt & pepper maybe some lemon juice, process it all and marinate the shrimp in it for at least 30 minutes then skewer shrimp and press paste all around them and grill them
Will miss S & A, they are moving away in just over 1 month. New phase of their life. Really got to know Sarah so much better over the 3 years they lived here. Hard to believe, seems like yesterday they got here.
