I tried out a new recipe last night because its simplicity really appealed to me since I pretty much hate cooking on Sundays. It turned out surprisingly delicious and full of flavor; I was expecting it to be a little bland because it was almost too easy. As per usual, I added more of this and less of that, but nothing that turned the whole thing on its head or anything.
It'd be a great weeknight meal when you're at a loss for what to make. The ingredients are things you probably have on hand so you'd be cooking from your pantry (bonus!).
Sausage Pasta Ingredients
* 3/4 pound pasta (I used penne)
* 1 tablespoon olive oil (I omitted this)
* 1 pound spicy Italian sausage (I used the ground kind)
* 1 onion, chopped
* 4 cloves garlic, minced (I used 5 or 6)
* 1 (14.5 ounce) can chicken broth
* 1 teaspoon dried basil
* 1 (14.5 ounce) can diced tomatoes
* 1 (10 ounce) package frozen chopped spinach (I used chopped fresh, and added it right at the end so it slightly wilted)
* 1/2 cup grated Parmesan cheese
Directions
1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
2. In a large skillet, heat oil and sausage; cook through until no longer pink. During the last 5 minutes of cooking, add onion and garlic to skillet. Add broth, basil and tomatoes with liquid.
3. Cook over medium heat for 5 minutes to slightly reduce. Add chopped spinach; cover skillet and simmer on reduced heat until spinach is tender.
4. Add pasta to skillet and mix together. Sprinkle with cheese and serve immediately.
(I simmered for probably 15 minutes so it would reduce down even more. I topped it with an Italian cheese blend and served with French bread and green salad. It was delish! Next time I will probably make a healthy version by using spicy turkey sausage instead of pork; whole wheat pasta, and low sodium chicken broth.)
