Alright! After weeks of searching, the elusive Texas Hash recipe has surfaced. Thank you Leslie for sharing it with us! I should point out that the original recipe comes from the Betty Crocker cookbook printed in 1950 (not the nice, modern one many of us have today!). This book is truly a gem, filled with some of the most lucious and amazing foods I've ever seen! Obviously, the original recipe required a good amount of ground beef, which you don't drain the grease from...mmmmmmm
Texas Hash (Veggie style)
Ingredients:
2 C reconstituted TVP
1 16 oz can diced tomatoes with chilis
1 C rinsed, uncooked rice
1 tsp chili powder
1 tsp salt (optional)
pinch pepper
Directions:
1. To reconstitute the dried TVP, mix with an equal amount boiling water. Mix all ingredients well in a large bowl.
2. Pour mixture into a greased 2 qt casserole dish. Cover and bake at 350 degrees for 1 hour. Remove the cover for the last 15 minutes for a crispier top.
Serves 6
Feel free to add other veggies as well--onions, peppers, carrots, whatever you feel like! It's a deeeelisious dinner, that's for sure!
