So money has been short and will continue to be short for a while so I'm delving back into cooking a lot. I realize that I've missed it quite a bit. It fills me with Content. Pun intended. :)
I bought some kale, spinach, onions and canned black beans and have been having a blast with them! I made a delightful cajun seared ahi tuna pasta veggie thing the other night. Sauteed onion, carrot and spinach, added the blanched kale and lightly tossed it with some rosemary and thyme and pasta. I plopped the seared ahi on top and it was so pretty! And hella tasty.
This morning I sauteed some more onion and carrot with cumin and oregano, then added black beans to warm up. It was looking tasty but not very breakfast-like. So I whipped up some egg and made it into a frittata. I don't have an oven so I can't crisp up the top of the frittata like usual, but I added cheese on top and kept it covered as it cooked and it was wonderful!
I love the simple ingredient, cheap, healthy and tasty foods!
