Malt Loaf

For the couple of people who did turn up at my tupperware party, and requested it, here is the Malt Loaf recipe.

1 cup All bran or equivalent
1 cup milk or equivalent - it works just fine with soy milk

Soak the all bran for at least an hour (longer is fine)

Add to that

1 cup Self-Raising Flour
1 cup sultanas
1 cup sugar
tsp mixed spice
and stir till well combined

Line a loaf tin with baking paper, pour mixture in and bake in a 180°C oven (170°C if fan forced) for about an hour.

It makes a reasonably moist loaf that is tasty, has only the fat in the milk, and whatever spread you put on it. And plenty of fruit & fibre. It also keeps well. If you make double the amount you can freeze the 2nd if you like.
